Tasty Tuesday: Anna's Stuff

Hey guys,

 Today I'm linking up with the lovely Miss Cami for another Tasty Tuesday. :)
Tasty Tuesday

 The recipe I'm sharing I got from my mom who got it from my Aunt Gail. The recipe had no name or if it did it got changed to Gail's Stuff. I had some of the stuff on hand and decided to make my own variation...which is now Anna's stuff...lol. ;)

 You will need:
 1 crockpot
 1 red bell pepper
 1 green bell pepper
 1 1lb ground beef
 1 can corn and peppers
 1/2 cup of shredded Colby
 1 jar Hunt's traditional tomato sauce
Add oregano and basil to your liking

 First brown your hamburger meat. Then strain and add to crockpot. Dice up your peppers and add all ingredients to pot. Cook on high until everything is cooked thoroughly. I whipped this up in a couple of hours, so no need to cook all day or too much preparation. You can serve this on it's on or over rice or pasta. Enjoy!

Tasty Tuesday: Chicken Parm.

Hey guys!

It's been forever since I linked up to Cami's Tasty Tuesday linkup. So since I tried a new recipe last week, I thought I would get back in the groove. :)


Tasty Tuesday

I found this recipe via Pinterest and used what I had on hand. (So it isn't quite up to Dr. Oz's standards, but it's probably better for you than most Chicken Parm. recipes.)

What you'll need:

Buttermilk ( Don't have buttermilk? Take a cup of milk and 1 TBS. of lemon juice. Let sit for 5 minutes...viola, Buttermilk! Such a simple trick, still makes me excited...lol.)

Boneless, Skinless Chicken breasts (I used chicken breast tenderloins. They are easy to work with, just use however many you need for your crowd.)

Fat Free Seasoned Croutons (Okay, so mine were not fat free, they were parmesan and caesar and came from Aldi...lol.)

Olive Oil Sprayer (Apparently, this is Devin Alexander's Secret weapon. So after looking up who the heck, Devin Alexander is, I will say this I just used the cooking spray I had here.)

Tomato Sauce (jar I got from Aldi...pretty tasty! Are you noticing a pattern here? I seriously can't get enough of Aldi. It's my new love!)

Low Fat cheese (Ummm...no! Sorry I used the mozzarella cheese I had in the fridge.)

***So yeah, my recipe is not quite up to par, but I used what I had on hand and was pretty proud of the results. :)

1. Soak your chicken in a ziploc bag filled with your buttermilk. (If you don't have buttermilk, you will want to do what I said in the ingredients part and make yourself some. :)

2. Crush your croutons in another ziploc baggy.

3. Coat your chicken in the crouton crunchies.

4. Coat your pan with the olive oil sprayer or cooking spray.

5. Bake Chicken at 350 until fully cooked.

6. Add your tomato sauce and top with cheese. Return to oven to broil and allow cheese to melt.

7. While this is going on, you may want to prepare a salad, garlic bread, boil noodles, etc.

8. Enjoy!

Tasty Tuesday: Easy Key Lime Pie

Hey guys!

Today's recipe is from Gooseberry Patch's 5 Ingredients or Less cookbook. Since we were traveling over the weekend, I decided to make this super simple and very tasty pie for Easter. (Sorry I don't have a picture, I asked John to put whipped cream on top and he covered it...which caused the pie to melt and look soggy and gross...whoops! lol BUT it tasted great!)


What you will need:

6 oz frozen limeade concentrate, thawed
14 oz can sweetened condensed milk
9 oz container frozen whipped cream topping, thawed
9 inch pie crust
1 lime (optional)

Combine limeade, milk, and whipped topping in a large mixing bowl; mix well. Pour into pie crust; freeze until firm, about 3 to 4 hours. Serves 8. (I added lime slices to top after the whipped cream, I had meant to add a dollop in the middle with the limes.) Enjoy!

Tasty Tuesday: Tavern Burgers

Hey guys,

Spring has arrived and with the above average temperatures, it seems like the perfect time to share a warm weather recipe.

Today's recipe is from "Crock Pot The Original Slow Cooker." It's three cookbooks in one and has recipes for chicken, 5 ingredients or less, and soups and stews.



You will need:

2 pounds lean ground beef (you can also use ground turkey)
1/2 cup ketchup
1/4 cup packed brown sugar
1/4 cup mustard
Hamburger buns

First cook the beef in a medium skillet over medium high heat until no longer pink. Transfer the beef to the crock pot slow cooker.

Next add ketchup, sugar, and mustard to crock pot. Mix well. Cover and cook on Low 4 to 6 hours. Serve on buns.

Tip: For those who enjoy pork and beans, you can add that as well when mixing. I'm not a fan, so you guys will have to let me know how that tastes. ;)

Tasty Tuesday: Salisbury Steak

Hey guys,

I hope you all had a wonderful weekend. Ours was very busy! The wedding was beautiful and I will post pictures and such soon.

So today I'm sharing a recipe from my mom. This was a favorite from childhood, I remember requesting it as my birthday dinner. I now cook it and it's a favorite of John's as well. I'm sorry I don't have pictures, honestly I'm lucky I got this post up. We just got back today and it's been pretty non-stop since Friday.



What you will need:

1 10 1/2 oz can Campbell's condensed French Onion Soup
1 1/2 lbs ground beef (I use turkey)
3/4 cup bread crumbs
1 egg slightly beaten
1/4 tsp. salt
dash of pepper
1 tbs. flour
1/4 cup ketchup
1/4 cup water
1 tsp. Worcestershire sauce
1 tsp. mustard

In a bowl, combine 1/3 cup soup with ground beef, crumbs, egg, salt, and pepper. Shape into 6 oval patties. In skillet, brown patties; pour off fat. Gradually blend remaining soup into flour until smooth. Add to skillet with remaining ingredients; stir to loosen browned bits. Cover; cook over low heat 20 minutes or until done. Stir occasionally. While the ingredients are cooking, cook some rice. This meal is great served over rice. You could probably serve it over mashed potatoes as well. Enjoy!

Tasty Tuesday: Pizza Margherita

It's time for another Tasty Tuesday post! As always I'm linking up with one of my favorite bloggers, Cami. :)
(I just linked up to her home page, because I'm posting this very early. My posts will continue to be like this due to my hubby's work schedule.)


Today's recipe comes from this great blog, I recently found. It has some tasty and incredibly healthy ideas!



What you will need:

1 pizza dough
1 28 oz can of crushed tomatoes
1 tsp dried oregano
1 tsp dried basil
1 tsp red wine vinegar
Salt and Pepper
3 cloves of garlic
Handful of Mozzarella cheese
Parmesan cheese
Handful of fresh basil

This recipe talks about a pizza stone, I didn't have one so I cooked according to the instructions on the pizza dough I purchased.

Make the pizza sauce. Mix the crushed tomatoes, oregano, basil, red wine vinegar. Stir it up and add salt and pepper to taste.  The sauce is ready when it has a tart taste to it.

Mince the three garlic cloves ( or get a jar already minced to save time)

Assemble the pizza. Spread the sauce thinly over the dough. (You should have plenty of sauce for other uses. My husband decided to use some today over his ramen noodles for lunch. lol) Sprinkle on the minced garlic, mozzarella, and parmesan cheese.

Bake until the cheese and crust are a nice brown color. (5-7 minutes approximately)

Add the fresh basil and be sure to eat the pizza before it turns a dark green color.

Tasty Tuesday: Bacon-Cheddar Pinwheels

Hey everyone!

Today's recipe is from Pillsbury and would make an amazing appetizer and/or party treat! :)


You will need:

1 can refrigerated crescent dinner rolls or 1 can Pillsbury crescent Creations

2 TB spoons ranch dressing

1/4 cup of cooked bacon, you could cook up some bacon or use the pre-cooked

1/2 cup of shredded cheddar

1/4 cup of green onions (We are not onion fans, so you can pass on these if you wish.)

Step one: Preheat oven to 350.

Step two: If using crescent rolls: Unroll dough; press each into 12x8-inch rectangle, firmly pressing perforations to seal. If using dough sheet: Unroll dough; press each into 12x8-inch rectangle.

Step three: Spread dressing over each rectangle to edges. Sprinkle each with bacon, Cheddar cheese and onions.

Step four: Starting with one short side, roll up each rectangle; press edge to seal. With serrated knife, cut each roll into 8 slices; place cut side down on ungreased cookie sheet.

Step five: Bake 12 to 17 minutes or until edges are deep golden brown. Immediately remove from cookie sheet. Serve warm.

Step six: Enjoy! :)

Tasty Tuesday: Snowballs in Mud

Hey everybody,

Today I'm sharing a recipe I found the Christmas before last from "Holiday Gifts from a Jar." These cookies are so delicious and so addictive. Plus with the name, you don't have to wait to next Christmas to whip up a batch!

Snowballs no longer just for throwing! ;)


You will need:

2 1/2 cups of all purpose flour

1 tsp baking soda

1/2 tsp salt

2/3 cup unsweetened cocoa powder

1 cup granulated sugar

3/4 packed brown sugar

3/4 chopped pecan halves, coarsely chopped

1/2 cup golden raisins

1 package white chocolate chips

1 1/2 cups (3 sticks) butter, softened

2 eggs

2 tsp. vanilla

Step 1: Preheat oven to 350. Lightly spray cookie sheet or line with parchment paper; set aside.

Step 2: Beat butter in large bowl until smooth. Beat in large eggs, one at a time. Beat in vanilla. (Mixture may appear curdled.) Add dry ingredients; stir until well blended.

Step 3: Drop dough by 1/4 cupfuls onto prepared cookie sheets, spacing about 4 inches apart. Press to flatten slightly.

Step 4: Bake 12-14 minutes or until firm in center. Cool 5 minutes on cookie sheets; transfer to wire racks to cool completely.

Step 5: Enjoy!

Tasty Tuesday: Peppermint Oreo Truffles

Hey everyone,

It's time for another Tasty Tuesday! As always, I'm linking up with Cami. Be sure to check out her post today, she has a great chili recipe that will warm you up on this cold day! :)

So I just want you guys to know that I love you all oodles. Oodles upon oodles, so I'm sharing this tasty recipe with you on the first day of my diet. ;) So as I lust after this amazing chocolate joy, I'll hope that you all will make it and eat a truffle just for me!

What you will need:

1 (16.6 ounce) package regular Oreo cookies
6 regular-size candy canes, finely crushed
8 ounces cream cheese, at room temperature
16 ounces semisweet chocolate, finely chopped
1 tablespoon coconut oil or vegetable oil

Place Oreos in food processor and pulse until finely ground. You can also use a plastic freezer bag and use something hard, such as a rolling pin to crush. You can also do this for the candy canes. You will need to reserve 2 tablespoons of candy cane for garnish. Add what's left to the crushed Oreos. Add cream cheese. Process until well combined and smooth.

Chill in refrigerator for 30 minutes-1 hour until slightly firm.

Line baking dish(s) with parchment paper. Use a spoon or ice cream scoop and place the Oreo mixture on the lined dishes. Be sure to keep the balls about the same size. Chill the balls an hour to 1 day. (I prepared mine one evening and chilled them overnight)

When the cookie balls are chilled, melt chocolate by combining chopped chocolate and oil in a medium microwavable bowl. Microwave in 30 sec. bursts---stirring between bursts, until melted and smooth.

Drop each cookie ball into melted chocolate, coating evenly. Remove with fork, gently tapping off excess chocolate. Place back on cookie sheet and garnish with the reserved peppermint. Repeat with remaining cookie balls.

Store in an airtight container in fridge.

Tasty Tuesday: Perfect Pumpkin Pie

Hey everyone,

It's another Tasty Tuesday and I'm excited to share a wonderful Pumpkin Pie recipe, I found a couple of years ago. My hubby loved it so much that it's a must-have every Thanksgiving! ;) (I love it too!)


You will need:

1 (16 oz) can pumpkin (about 2 cups)
1 (14 oz) sweetened condensed milk
2 large eggs
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 (9-inch) unbaked pie crust

Heat oven to 425. Whisk pumpkin, condensed milk, eggs, spices, and salt in medium bowl until smooth. Pour into crust.

Bake 15 mins. Reduce oven temp. to 350, bake an additional 35-40 mins or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Enjoy!

***If you missed yesterday's post, I could really use some advice on a camera. Ours has about had it and I need a user friendly camera without a lot of bells and whistles. I want a camera that takes good quality pictures (I know this also depends on the user), but isn't complicated. Your thoughts are appreciated. :)

Tasty Tuesday: Anna's Turkey Casserole

Hey all,

It's time for another Tasty Tuesday. My bloggy friend, Cami, throws this amazing recipe party each week, you should definitely check it out! (http://www.firstdayofmylife.org/)

Last week, Kroger had turkey on-sale and each year, I try to grab a small turkey to have a mini-Thanksgiving for me and my husband. I love turkey and with two people, we got three meals from one turkey...pretty awesome, huh?! We had turkey and sides the first night, the next day amazing turkey and gravy sandwiches and then this turkey casserole that creatively took residency in my brain. ;)


Anna's Turkey Casserole

You will need:

Turkey (just a few handfuls of leftovers)

1 can cream of celery

1 can cream of chicken

1 can of peas

1 cup cheddar cheese

sprinkle bread crumbs over the top

I put it in the oven at 350 and let it cook through and until the cheese and bread crumbs formed a nice crust. So there you have it, an easy recipe for your Thanksgiving leftovers. :)

Tasty Tuesday: Anna's Meatloaf Soup

Hey everyone,

I'm linking up with Cami, here for another Tasty Tuesday. You should join in the fun. :) Last week, I made a tasty meatloaf and had plans to make a soup. Since there are only two of us, and a good bit of leftovers I decided to try something new.

Here's the meatloaf recipe:

1 env. Lipton onion soup mix
1 1/2 lb. meatloaf mixture, ground beef and ground pork (I use ground turkey)
1 c. soft bread crumbs
1 egg
1/2 c. water
1/4 c. ketchup

***I also added a few dashes of Worcestershire sauce...love that stuff!

Preheat oven to 350 degrees. In large bowl combine all ingredients. In large shallow baking pan, shape into loaf. Bake 1 hour.

So once you have your meatloaf, you are ready to make my soup!


What you will need:

1 can of vegetable broth

1 jar of spaghetti sauce (I get mine from Trader Joe's)

whatever veggies you have on hand (I used canned potatoes, carrots, corn, and peas. Also had some leftover frozen lima beans.)

I added more Worcestershire sauce

1 cup of french fried onions

and whatever spices you enjoy!

I cooked this all in a dutch oven for a few hours (on high) along with the meatloaf. Be sure to let the soup cool and enjoy! :)

Tasty Tuesday: Chewy Granola Bars

Hi everyone!

I hope you all are having a good day. It's another rainy one here, which is good because we desperately need the rain. John and I went out earlier (which means I got to wear my rain boots for the first time out!) and I got stocked up on treats for some friends, that I'll be mailing out this week. I also got a crazy amount of storage containers. I'm determined to get things organized...(it's taken me two shopping trips to get everything I need! Craziness!) I'll update you on that later. So on to the granola bar goodness.

My husband and I love granola bars. It's often one of those extra grabs at the grocery store. So I started thinking and wondered what it would be like to make some myself?! I found a great recipe in Gooseberry Patch's All Through the Seasons' cookbook.


Here's what you will need:

1/2 c. margarine, softened
1 c. brown sugar, packed
1/4 c. sugar
2 T. honey
1/2 t. vanilla extract
1 egg
1 c. all-purpose flour
1 T. cinnamon
1/2 t. baking powder
1/4 t. salt
1 c. quick cooking oats
1 1/4 c. puffed rice cereal
1 c. chopped pecans
1 c. raisins
1 c. chocolate chips

Cream margarine, sugars, honey, vanilla, and egg, mixing well. Combine all dry ingredients and add to creamed mixture. Press into a greased 13X9X2 baking pan and bake at 350 degrees for 22 to 28 minutes. Let cool, cut into bars. You can sub. peanut butter chips or butterscotch chips for the chocolate if you like. Makes 16 bars.

These turned out really great. They were a little messier than I hoped for, but they were perfect to pack with John's meals for work. John is ready for me to make more and I look forward to making them. It was a simple and delicious recipe. :)

Tasty Tuesday: Red Lobster Cheddar Bay Biscuits

Hey everyone,

It's another Tasty Tuesday! I got this recipe from a friend, she made a big wonderful dinner for her husband's birthday and I just loved these biscuits! :)

You will need:

2 cups Bisquick
2/3 cup milk
1/2 cup butter
1/2 tsp. garlic powder
1/4 tsp. old bay powder

Pre-heat oven to 450. Stir together Bisquick, milk, and cheese. Spoon onto ungreased cookie sheet. Bake 8-10 mins. In a small saucepan combine butter, garlic, powder, and old bay seasoning. Heat until melted. Spoon over biscuits. Serves 12. Enjoy!

Tasty Tuesday: Back-to-School Apple Cake

Hey everyone,

It's time for another Tasty Tuesday and I'm linking up with Cami over at http://www.firstdayofmylife.org/. :) Today's recipe comes from Gooseberry Patch Fall Favorites with Sun Maid Raisins and Dried Fruit. (This is a small cookbook I requested and was sent through the mail...yay! for free stuff!)


You will need:

3 c. all purpose flour
1 1/2 c. sugar
2 t. cinnamon
1/4 t. nutmeg
1/2 c. raisins
1 c. chopped walnuts (I didn't have walnuts so I didn't use anything...but I'm sure you could substitute if you like)
1 c. oil
3 eggs
1 t. vanilla extract
3 c. Granny Smith apples, cored, peeled, and diced

Combine flour, sugar, baking soda, spices, raisins, and walnuts in a large bowl; mix well. Form well in the center; add oil, eggs, vanilla, and apples. Stir until combined; spoon batter into greased Bundt pan (I used a loaf dish) Bake at 350 for 60 minutes or until toothpick inserted near center tests clean. Cool and serves 12.

This cake was pretty good, John enjoyed it more than I did. ;) It's a perfect way to use up apples given from family or from apple picking. Enjoy!

Tasty Tuesday: The Best Freezer Pickles

Today I will be sharing a recipe from Homemade Harvest another tasty recipe from Gooseberry Patch! :)


The Best Freezer Pickles

You will need:

4 c. cucumbers, thinly sliced
Optional: 1 to 2 c. onions thinly sliced
2 T. salt
2 T. sugar
1/2 c. cider vinegar (You can use any kind of vinegar really, it just depends on what taste you like. We used apple cider for sweet pickles)
1 t. dill weed,
4 1/2 pint freezer-safe plastic containers and lids, sterilized

Mix cucumbers, onion, salt and water. Let stand for 2 hours; drain. Return to bowl and add remaining ingredients. Let stand until sugar is dissolved and liquid covers vegetables, approximately 2 hours. Spoon into sterilized containers leaving 1/2 inch headspace; secure lids and freeze. Thaw in refrigerator before using. Makes 4 containers.

NOTE: We decided to can ours instead and used instructions from one of our cookbooks, it worked perfectly. So this recipe is pretty flexible. :) If you don't have a cookbook on canning, I've googled it before and there is plenty of information available on the subject!

Tasty Tuesday: Slow-Cooker Apple Butter

Hey everyone,

The past two weeks, John and I have spent our time harvesting and canning fruits and veggies from our families garden. I just thought I would share a recipe with you all. I have quite a few, but you will have to check back every Tuesday...to see them all. ;)


The first recipe is from Gooseberry Patch's Homemade Harvest cookbook. I think everyone should own a Gooseberry Patch cookbook. They all contain delicious and simple recipes. (Unfortunately, I am not being paid to say that.;)

Slow-Cooker Apple Butter (My hubby is from the mtns of VA. I didn't even know apple butter existed, until I met him. He just loves it. So I tried whipping up a batch of my own and it was pretty heavenly...if I do say so myself! ;)

12 granny smith apples, cored, peeled and quartered
1 1/2 c. brown sugar, packed
1 T. lemon juice
1 t. allspice
4 1/2 pint freezer-safe plastic containers and lids, sterilized

Combine all ingredients in a slow cooker. Cover and cook on low setting for 8 to 10 hrs, or until apples are very tender. Mash apples with potato masher or fork. Cook, uncovered on low setting for 1 to 2 hours, stirring occasionally, until mixture is very thick. Cool about 2 hours. Spoon into sterilized containers, leaving 1/2 inch headspace; secure lids and freeze. Thaw in refrigerator before using. Makes 4 containers.

If you are an apple butter newbie, apple butter is wonderful with biscuits, toast, any kind of bread. My husband says it's best fresh and hot. :)

Tasty Tuesday: Stuffed Peppers

Hey everyone!

Hope you all are having a wonderful day! Mine has been pretty good thus far, still getting used to John's new schedule. It's been weird cooking dinner in the day time! I tried a new recipe today and it was delicious!


Ingredients:

1 pound ground beef (I used turkey and added spices to help with taste)
1/2 cup uncooked long grain white rice
1 cup water
6 green bell peppers
2 (8 ounce) cans tomato sauce (I used the tomato sauce I got from Trader Joe's. It has less sugar than most brands and it's tasty!)
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper to taste
1 teaspoon Italian seasoning

Preheat oven to 350 degrees F (175 degrees C).

Place the rice and water in a saucepan (I used my wonderful rice cooker), and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned.

Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.)

In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper.

Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.

Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.

Tasty Tuesdays: Hawaiian Chicken

Hey everyone,

This past weekend was rather uneventful. It was a nice weekend, but not much to write about. So on to bigger and better things! Today is Tuesday, so it's time for another Tasty Tuesday entry! :)


Today's recipe comes from Gooseberry Patch's 5 Ingredients or Less cookbook. This delicious chicken was simple and was a great new recipe to add to the mix. :)

Hawaiian Chicken

Ingredients:

3 cups pineapple chunks, undrained
1 cup soy sauce
1 t. ground ginger
1/4 garlic, chopped
4 lbs split chicken breasts (I used boneless skinless strips, it's what I always use for just about anything)

Mix all ingredients except chicken together. Add chicken; marinate for 4 hours in fridge. Grill chicken until browned; arrange in an ungreased 13X9 baking pan. Bake, uncovered, at 325 for 1 hour. Serves 4.

This recipe was very flavorful and moist. It was a great way to spice up something I get tired of...chicken. I know why people buy chicken, it can get very dull though. I've been trying to be more experimental and try new things and I was very glad I did with this one! :)
