Tasty Tuesday: The Best Freezer Pickles

Today I will be sharing a recipe from Homemade Harvest another tasty recipe from Gooseberry Patch! :)


The Best Freezer Pickles

You will need:

4 c. cucumbers, thinly sliced
Optional: 1 to 2 c. onions thinly sliced
2 T. salt
2 T. sugar
1/2 c. cider vinegar (You can use any kind of vinegar really, it just depends on what taste you like. We used apple cider for sweet pickles)
1 t. dill weed,
4 1/2 pint freezer-safe plastic containers and lids, sterilized

Mix cucumbers, onion, salt and water. Let stand for 2 hours; drain. Return to bowl and add remaining ingredients. Let stand until sugar is dissolved and liquid covers vegetables, approximately 2 hours. Spoon into sterilized containers leaving 1/2 inch headspace; secure lids and freeze. Thaw in refrigerator before using. Makes 4 containers.

NOTE: We decided to can ours instead and used instructions from one of our cookbooks, it worked perfectly. So this recipe is pretty flexible. :) If you don't have a cookbook on canning, I've googled it before and there is plenty of information available on the subject!

  2. It's funny you blogged about pickles today. My daughter, Maria, and I were at lunch today and she was talking about how the lady at Subway always looks at her with disbelief as she (Maria) keeps instructing her to add more pickles. Maria prefers a fistfull of them on her veggie sandwich!
