Anna's "Famous" Banana Bread and New Banana Raisin Muffin Recipes

Hey all!

I hope you all had a wonderful weekend! I'm up and running as you can see. I'm back to making regular posts! Yay!

Today I would like to share with you two recipes. One is for my banana bread that I get requested to make from family quite often and another is a new recipe that I recently invented. ;)

Anna's "Famous" Banana Bread

Preheat oven to 350.

You will need:

3 to 4 ripe bananas
1/3 cup melted butter
1 cup of sugar or preferred sweetener
1 beaten egg
1 tspn vanilla
1 tspn baking soda
1 pinch of salt
1 1/2 cups of all purpose flour

Extras:

I from time to time have added---

1 cup of peanut butter
1 cup of chocolate chips
1 cup of walnuts
I have used a pinch of cinnamon instead of vanilla when I was out.

***I'm sure there are other additions I just can't think of. BUT be creative and have fun!

With a wooden spoon, mix butter with mashed bananas (I mash the bananas, but not super fine. This is one of John's favorite things about my banana bread.) in a medium bowl. Mix in sugar, egg, and vanilla, sprinkle baking soda and salt over mixture. Add the flour last and mix well. Pour into greased loaf pan and bake for an hour. ***Add any additions after you have added flour.***

Declan cannot yet have peanut butter and for this last batch of bread, I made it with peanut butter...so I created another recipe just for him. :)

New Banana Raisin Muffin Recipe

Preheat oven 350.

You will need:

2 ripe bananas
1/3 cup melted butter
1/2 cup of sugar
1 beaten egg
1 tspn vanilla
1 tspn baking soda
1 pinch of salt
1 1/2 cups all purpose flour
1 cup raisins

Follow the directions for the bread. Grease a muffin pan and keep an eye on the muffins. They don't take as long and I forgot to get an exact time on them. Enjoy!

  1. I'm going to have to save that recipe. I love banana bread! But have yet to find just the right recipe. I hadn't thought of adding any of those things. Sounds good!
