Weekend Roundup!

Hey everyone!

Our weekend really began on Saturday. (Friday was spent grocery shopping and preparing for Saturday.)

Saturday: I spent the day cleaning and getting ready for a nice dinner with family. I made the main courses---Chicken and Rice Casserole and Chicken Cacciatore. ( I have a pretty big family and my sister isn’t a fan of rice.) So these two dishes were perfect! I’m going to share the recipes with you. Sadly, I didn’t get pictures---completely forgot with the visiting, watching crazy youtube videos, games, etc.

Chicken and Rice Casserole:
Ingredients-
4 chicken breasts (I like to use skinless/breadless chicken strips)
½ stick of butter or ¼ cup butter
½ cup of milk
1 cup water
1 can of cream of chicken soup
½ cup uncooked rice
Salt,pepper, and paprika to taste (Paprika is totally optional)

Preheat oven 350. Put chicken in baking dish. (I spray the pan first, I do these even when not directed, because everything always sticks for me.) Sprinkle salt, pepper, and paprika. (This batch I made without and it was just as tasty) Mix together butter, milk, water, cream of chicken soup, and rice. Pour over chicken and sprinkle over top with more paprika, if you wish. Bake 1 hour.

Easy Chicken Cacciatore Bake:
Ingredients-
1 can Italian style diced tomatoes
2 cups quartered zucchini slices
4 boneless skinless chicken breasts or strips
1/3 cup shake n bake seasoning coating mix
2 tbsp. Kraft 100 percent grated parmesan cheese
1-1/2 cup penne pasta, cooked and drained

Preheat oven 375. Toss tomatoes and zucchini in 13x9 inch baking dish. Measure 1/3 cup coating mix; place in plastic bag. Coat chicken as directed on package. Place chicken over tomato mixture; sprinkle with parmesan cheese. Bake 30 to 35 mins or until chicken is cooked through. Serve over pasta.

Sunday:

Yesterday was such a beautiful day! I’m so glad I got to spend some time outside. The morning began with breakfast and getting ready for church. I was especially excited that we actually got to church on time. We live about 45 mins. away, so it was definitely a personal victory! ;) Yesterday’s message was from Romans 5. It was a great message on not letting sin take over your life. After the service, we enjoyed some time of talking with friends, followed by lunch. Once we arrived home, we were greeted by Sophie. I just love my dog! <3 We then headed to Tractor Supply-with no luck. So it was on to Lowes to pick up seeds and gardening equipment. We also got some nice folding chairs for camping and sitting outside. Once we made our purchases, we headed home for a nice walk with Sophie, followed by dinner on the grill. ;) Our new grill

All in all it was a wonderful weekend :)
